Healthy Snack // Popcorn

 
 
 

Besides fruits and vegetables, I do not find there are a lot of healthy snack options out there. I love the eating anything with hummus, but I do like to mix it up! I am going to share my love of popcorn with you all. Sometimes it's hard to think of quick and easy snacks to eat when your busy working, at school, or just doing errands. I find it helpful to make a batch of popcorn and store it in a glass container so it can last me for 2-3 days. That way when I am hungry mid-afternoon, I can snack on some light popcorn before dinner.

When eaten the right way, it is a low calorie, tasty, and healthy snack! Swap those potato chips for some yummy popcorn. It can satisfy your craving and hunger just as well, if not more. One cup of air popped popcorn is around 31 calories! Most people do not realize this, but popcorn is in fact a whole grain food and is very high in fiber, therefore making it a nutritional snack! Now, when I say “air popped popcorn” that is key!

Having pre-packed popcorn does serve the same benefits as if you were to make fresh popcorn with kernels on the stove or with a popcorn machine. Personally, I make my own popcorn with olive oil and sprinkle it with pink Himalayan salt. Think about it..having fresh popped popcorn vs. having popcorn that was microwaved from a package that has artificial butter? I think the choice is simple!

Ingredients & Directions: with a machine 
Place 3/4 cup whole grain kernels into popcorn machine.
Drizzle 1 TBSP organic olive oil and start the machine!
Once popcorn is ready, sprinkle salt of your choice while it is still hot.
I usually toss the popcorn, drizzle more olive oil then add more pink salt & so on until I get it how I like it. You can replace the olive oil with organic butter or coconut oil as well.

Ingredients & Directions: on the stove

*please note each stove temperature is different and will require experimenting if you are making it on the stove*

3 Tbsp of organic olive oil, organic butter, or coconut oil

Salt

1/2 cup popcorn kernels

  1. Place oil and kernels into a large pot, cover it with the lid

  2. Cook on medium-high heat for about 3 minutes until the popcorn has popped

  3. Season with salt of your choice
